Try this for a hot cereal in the morning as a substitute for your comforting and warming oatmeal - while remaining gluten free and reaping all the benefits of the superfood quinoa to start your day.
Blend 1/4 cup of organic sprouted quinoa into a powder-like substance. Simmer quinoa powder in 1 cup boiling water and stir continuously until water absorbs and it becomes a paste. This literally takes like 30 seconds. Immediately stir in a spoonful of coconut oil, a splash of organic almond milk, a heaping dash of organic cinnamon, and a spoonful of Xyletol sweetener.
Its really yummy and quick and full of protein, antioxidants, amino acids and fiber. I include this in my breakfast almost 3 times a week.
Bananatastic French Toast (7 pts)
One day I’ll get better at foodtography but today is not that day! Not to mention I was in a rush to take this picture so I could quickly consume my breakfast and head out the door to class.
I absolutely love this recipe and can and will eat it every day - forever.. and ever.
Ingredients:
- two slices of whole wheat bread
- 1 egg
- 1/4 cup of soy milk
- 1 banana
- 1/2 tsp cinnamon
- 2 tsp honey
- light cooking spray
Directions:
- Start by lightly spraying your frying pan with cooking spray and warming on burner over medium high heat
- My bread is always kept in the freezer so I put it in the toaster before I work on preparing my banana/egg concoction (skip this step if you have fresh bread)
- Combine 1 whole egg, 1/4 cup of soya/milk, 1/2 tsp cinnamon and half of banana in blender and mix until smooth - place mixture in a large container for dipping your bread (I use a square tupperware container)
- Soak one slice of bread in mixture, flipping to make sure it’s well coated (if you’re using toast like me this may take a minute or two)
- Once your bread is nicely soggy, place on the heated frying pan and cook - usually 2-3 minutes each side - place your other slice of bread in the remaining mixture and coat on both sides while this one is cooking.
- Thinly slice other half of banana and set to side for topping
- Place cooked toast on plate and drizzle 2 tsp of honey on top slice
- Top with banana slices and a dash of cinnamon
- EAT!
